Last summer I was taught the benefit of freezing yogurt for the kids. In small dots it is easy, healthy, and became an instant favorite in our home. This summer the frozen yogurt dots get a fun dose of style - in the shapes of our favorite animals! It has made our afternoon summer snack times all the more wonderful.
To make the animal yogurt pops for your kids (or yourself!), use small animal cookie cutters. You can buy really cute ones right here.
Place cookie cutters on a tray or surface that can be put in the freezer (wax paper can be placed on the bottom of the tray for easy removal). Spoon yogurt of any flavor/color into each cutter, filling to the top; make sure to get into the nooks and crannies of the cookie cutter. It's ok if a little yogurt leaks out from the bottom. When hardened, the excess yogurt can be trimmed with a knife.
Place tray in the freezer for 15-20 minutes. Yogurt should be slightly hardened but you still should be able to insert a popsicle upright in it without it falling over. Insert sticks into yogurt, position the stick towards the middle of your cookie cutter shape. Return tray to the freezer and allow popsicles to freeze completely.
When you are ready to serve, remove tray from the freezer and let sit for 3-5 minutes. Allow frozen yogurt to soften just enough to be able to release the cookie cutters from the newly formed popsicles. One way to do this is to take a small piece of plastic wrap and lay it smoothly across the front of your cutter (this is to prevent your fingers from smudging the surface). Gently and evenly push the yogurt through the cutter with one hand as you hold and pull the popsicle stick with the other. You can also gently squeeze the cutter to loosen the yogurt. This may take a little practice but you'll be rewarded with cute frozen yogurt shaped elephant, dinosaur, and whale in the end!
