Since Rainbow Cookies resemble the colors of the Italian flag, they're often associated as being an Italian dessert. These little finger food cakes are made of yellow, red and green layers of almond based sponge cake and likely originated in the early 1900's in order to pay homage to the Italian culture.
After the layer of almond sponge cake is assembled, they are then liberally covered with a chocolate coating. These cookies, or small cakes, have a layer of raspberry jam between each colored layer, however, you can use apricot jam or whichever jam you prefer.
