Malika Ameen's Chocolate-Hazelnut Clouds with Cocoa Nibs

Admittedly, I’ve been pretty busy with some commercial projects, so I didn’t have much time to do much holiday baking this year.  I saw Chef Ameen’s (You may remember her from Season One of Top Chef Just Desserts) recipe in the December issue of Food and Wine.  These meringues are very easy to make.  The hardest part was actually finding cocoa nibs at Whole Foods (they were all the way at the bottom of one display rack.) 

Cloud really is an accurate description for these light as air cookies. They taste  like a cross between a spiced chocolate chip cookie inside a meringue. I loved the combination of the chocolate, cardamon and hazelnut flavors! While cooking them the apartment started to smell Christmasy and it really got me into the holiday spirit.

I definitely recommend baking these cookies and think they might even be interesting if you added some instant coffee instead of cocoa powder.  I’ll have to try that.
