Now that my boyfriend and I live together, we've found a shared passion for cooking. We love to search the Internet for various recipes and then add, remove, or change ingredients to cater to our palate—and our diet. We also have been trying to make our own homemade sauces instead of relying on jarred, which often contain tons of sodium and loads of ingredients we can’t even pronounce! We’ve been honing our sauce making skills and have come up with this tasty and healthy recipe.
Get the recipe for our healthy homemade turkey sausage sauce below:
1 pound whole wheat rotini pasta, uncooked
1 pound Italian turkey sausage links, casings removed
2 tablespoons olive oil
1 medium yellow onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
4 cloves garlic, finely chopped
2 cans (14.5 ounce) crushed tomatoes, undrained
1 tablespoon dried oregano
1 tablespoon dried basil
Salt and pepper, to taste
Parmesan cheese (optional)
Prepare pasta according to package directions.
Meanwhile, cook sausage in a large skillet over medium-high heat for five minutes or until no longer pink, breaking up clumps with a wooden spoon. Remove sausage from skillet and cover to keep it warm. Wipe out skillet with a paper towel.
Heat oil in the skillet still over medium-high heat. Add onion and bell peppers, and cook five minutes or until onion is tender, stirring frequently. Add garlic and cook another three minutes. Stir in canned tomatoes. Add oregano, basil, salt and pepper. Reduce heat to low and simmer for 30 minutes, stirring occasionally. Remove from heat.
Drain pasta and place in a large serving bowl. Add tomato sauce and sausage; toss until well blended and top with freshly grated Parmesan.
